Beet Salad

My New Year's resolution for this year is to cook my way through Jamie Oliver's Cook with Jamie. I'm hoping to stretch my cooking skills, and I'm excited about doing it. I decided to start with crunchy raw beetroot salad with feta and pear. Here's the finished result:

I used apples instead of pears and a soft cheese I found at the farmer's market.


It was simple and fresh and I absolutely loved it.


Crunchy beetroot salad with soft cheese and apple

2 good-sized beetroots, peeled and cut into fine matchsticks
1 apple cut into matchsticks
lemon oil dressing (3T lemon, 10T olive oil, salt and pepper)
sea salt and freshly ground black pepper
1 oz. soft cheese
a few leaves of mint

Dress the beetroot and apple matchsticks in a little of the lemon oil dressing and season with some salt and pepper. Taste to check that the flavors are balanced and add a little more lemon juice to check the sweetness of the pears and beetroots if you need to.

Divide the salad between two small plates, crumble over the cheese, sprinkle with baby mint leaves.

Up next: Roasted chicken breast wrapped in prosciutto with leeks and thyme.

  1. What a great idea! I was just thinking about you the other day, missing being able to eat over at your house :D I'm so glad we took advantage of that so often!

    Can't wait to see more food adventures! This one looks delightful.
